| Monday 3/11/13 B: 1 egg, 2 egg whites, chopped spinach; 1 c. 1% milk; 1 clementine S: carrot sticks & 15 almonds L: Salad in a Jar: lots of veggies, romaine lettuce, spinach topped with flaked salmon & Clean Honey Mustard dressing made with Greek Yogurt S: 1/2 c. LF Cottage Cheese + 1/2 c. strawberries D:
Tuesday 3/12/13 B: 1/2 c. GF Oatmeal, 2 T. raisins, 1/2 c. 1% milk, 1/2 c. water S: None - ISTEP testing - Darn! L: 1/2 c. brown rice, 2.5 oz. shredded beef, 1 english cucumber, sliced & 1 clementine S: carrots & 15 almonds D: crockpot chicken (skinned removed), cooked carrots, mixed broccoli & cauliflower
Wednesday 3/13/13 B: 1 egg, 3 egg whites mixed with chopped spinach and topped with ground pepper; 1 c. 1% organic milk S: IREAD testing today - none L: Large veggie salad topped with 2.5 oz. crockpot roasted chicken; Clean Honey Mustard dressing made with Greek Yogurt S: 1/2 c. LF cottage cheese, 3/4 c. strawberries D: Got home after 13+ hours work - - wasn't prepared for that; Overate! Ham, peas, swiss cheese, raisins
Thursday 3/14/13 B: 1/2 c. GF Oats made with water; added small box raisins S: None - took me 3 hours to eat all my oatmeal -- busy, busy morning L: Canned Homemade Beef Vegetable Soup S: celery sticks & 1 T. natural PB D: Spaghetti made with brown rice noodles and homemade sauce topped with pork sausage, sprinkled with cheese; green beans with red onion RESISTED the ice cream cake my husband bought for my daughter for her 16th birthday - - it sure looked yummy.
Friday 3/15/13 B: 2 eggs, 2 whites, with chopped spinach S: Clementine + 1 oz. sharp cheddar cheese L: 3/4 c. Spaghetti with sausage & small apple S: Celery sticks and 1 T. peanut butter S: HUNGRY: 3/4 c. leftover spaghetti + 1.5 oz. cheese D: Hamburger and homemade french fries
Saturday 3/16/13 B: 1 egg, 3 egg whites, chopped spinach topped with homemade salsa S: String cheese and small apple L: Not at home - didn't have much: Blue Organic Corn Chips & Homemade Salsa, Small Apple S: Tortilla chips & Salsa, Cottage Cheese D: 2.5 oz. grilled chicken breast, 1/2 baked potato, 3/4 c. green beans
Sunday 3/17/13 B: 1 egg + 2 egg whites mixed with sauted 1/2 potato, red onion and chopped spinach - topped with homemade salsa S: 1/2 cup quinoa mixed with baked apples & cinnamon L: 1brat and baby carrots, raw S: none D: 4 oz chicken breast, 1/2 c. Cottage cheese, sautéed green beans and onions in EVOO

| Hi Heather - I kinda do my own thing when it comes to Salad in a Jar - but yes, found the idea on Pinterest. Because of my Salads in a Jar - - a coworker has started doing the same thing.
They really do stay fresh for a long time. I did a little experiment with chopped romaine lettuce and it lasted for 2 weeks! | |
